Unless you've been living under a rock, you'll have heard about Quinoa (pronounced 'keen-wah').
It seems to be the new 'all-singing-all-dancing' health food of the moment.
"Quinoa (tiny, bead-shaped, with a slightly bitter flavour and firm texture) is a complete protein - containing
all eight of the essential amino acids. It has been recognised by the United Nations as a supercrop for
its health benefits as it's packed with dietary fibre, phosphorus, magnesium and iron. It is also gluten-free
and easy to digest. The facts suggest it is close to a perfect ingredient as you can get."
So, I thought it was time to bring you an easy and tasty recipe using this new superfood.
May I present to you, Quinoa Chilli...
|Ingredients: 200g quinoa, tin of red kidney beans, tin of chopped tomatoes, 1 red pepper,|
1 large onion, 1 courgette, 1 carrot, 2 cloves of garlic and approx. 1 tsp of chilli powder.
|1. Chop the onion and garlic...|
|...and heat in a little oil for 5 minutes.|
|2. Chop the courgette, carrot and pepper...|
|...and add to the saucepan with the onion and garlic.|
|3. Season with spices - I just used chilli powder - then add the tinned beans and tinned tomatoes.|
|4. Add two cups of quinoa (approx 200g)...|
|... followed by four cups of water. You can use vegetable stock for extra flavour.|
