Laura Cooks: September

Unless you've been living under a rock, you'll have heard about Quinoa (pronounced 'keen-wah'). 
It seems to be the new 'all-singing-all-dancing' health food of the moment.

"Quinoa (tiny, bead-shaped, with a slightly bitter flavour and firm texture) is a complete protein - containing 
all eight of the essential amino acids. It has been recognised by the United Nations as a supercrop for 
its health benefits as it's packed with dietary fibre, phosphorus, magnesium and iron. It is also gluten-free
and easy to digest. The facts suggest it is close to a perfect ingredient as you can get."

So, I thought it was time to bring you an easy and tasty recipe using this new superfood. 
May I present to you, Quinoa Chilli... 

Ingredients: 200g quinoa, tin of red kidney beans, tin of chopped tomatoes, 1 red pepper,
1 large onion, 1 courgette, 1 carrot, 2 cloves of garlic and approx. 1 tsp of chilli powder.
1. Chop the onion and garlic...
...and heat in a little oil for 5 minutes.
2. Chop the courgette, carrot and pepper...
...and add to the saucepan with the onion and garlic.
3. Season with spices - I just used chilli powder - then add the tinned beans and tinned tomatoes.
4. Add two cups of quinoa (approx 200g)...
... followed by four cups of water. You can use vegetable stock for extra flavour.
 5. Bring to the boil, then simmer for for 20-30 minutes, or until the quinoa has cooked. While the quinoa
is cooking, stir occasionally so that it does not stick to the bottom of the pan.
