Laura Cooks: August

As promised last month, today I bring you a really easy recipe for tasty Mexican Bean Burgers.
Ingredients: 400g red kidney beans, 1 egg, chilli powder, breadcrumbs (approx 75g) & salsa
1. Roughly mash the beans.
2. Add chilli powder to suit your taste.
3. Add the breadcrumbs...
... followed by the egg...
... then two tablespoons of salsa (less or more depending upon your taste)
4. Your mixture should look something like this. It needs to be dry enough to stick together, so if 
it's a little runny at this point, add more breadcrumbs. Wet your hands and shape the mixture 
into 3-4 burgers.
5. Grill on each side for 5 to 10 minutes, or until the burgers turn brown.
Serve & enjoy
Whilst I was making these delicious burgers, Hubby had a
second go at last month's recipe, spicy turkey burgers. 
Both this recipe and my turkey burgers recipe appeared in Aspire magazine this week :)
